Here's a brand-new recipe for you to enjoy. As the title may suggest, it's not a vegetarian dish. It looks really tasty, and it's healthy, as the nutritional information included tells you. Spiced Spanish chicken with lemon rice
- 2 breasts Chicken
- 1 can tinned tomatoes
- 1 stick celery
- 2 spring onions
- ½ onion
- ½ green and red pepper
- Rice check packaging for serving suggestions
- 6 tablespoons frozen peas
- 6 tablespoons sweetcorn
- 1 lemon
Spices (All ½ teaspoon)
- Chilli powder
- Mixed herbs
- Black pepper
Boil water for the rice and cook according to the packaging.
Slice the chicken into small pieces and cook in a frying pan until thoroughly cooked through.
In the meantime chop the vegetables and cook in the same pan as the chicken, when soft add in the tinned tomatoes, spices and ½ the lemon juice.
Steam the rice in the last 5 minutes of cooking and add in the peas and sweetcorn.
To serve squeeze the other ½ of lemon onto the rice and add the chicken on to the top.
