Guacamole and Egg Toast
This is an amazingly simple but super tasty recipe for your quick lunch or post-workout snack. It's also really healthy, and vegetarian. If you want, you can also just make the guacamole separately and use it as a dip, or in a different dish. I hope you enjoy making and eating it!
- 1 avocado ripe
- 1 tomato chopped into small cubes
- 1 clove garlic chopped fine
- 1 lemon juiced
- coriander to taste
- salt and pepper to taste
Egg and Toast
- 2 eggs soft- or hardboiled
- 2 slices toast bread
Peel and de-stone the avocado, and then mash using a fork until smooth
Add the chopped tomato, garlic, and lemon juice, season to taste with salt, pepper, and coriander, mix thoroughly
Boil the eggs to preference and toast the bread
Combine by layering the guacamole on the toast and topping with slices of egg. Season with salt and pepper.
