Spiced Spanish chicken with lemon rice

A Spanish inspired dish right at your dinner table, I really enjoyed making this dish, when it cooks the room is filled with so many different aromas. And more importantly it tastes amazing, I was surprised at how tasty the rice was too, I’ve never been adventurous with rice but it’s amazing what a squeeze of lemon can do! With regards to nutrition this one was very good all nutrients are green on the traffic light system, and provide a good source of protein and fibre.

Ingredients

  • 2 breasts Chicken
  • 1 can tinned tomatoes
  • 1 stick celery
  • 2 spring onions
  • ½ onion
  • ½ green and red pepper
  • Rice check packaging for serving suggestions
  • 6 tablespoons frozen peas
  • 6 tablespoons sweetcorn
  • 1 lemon

Spices (All ½ teaspoon)

  • Chilli powder
  • Mixed herbs
  • Garlic
  • Black pepper
  • Paprika

Instructions

  1. Boil water for the rice and cook according to the packaging.
  2. Slice the chicken into small pieces and cook in a frying pan until thoroughly cooked through.
  3. In the meantime chop the vegetables and cook in the same pan as the chicken, when soft add in the tinned tomatoes, spices and ½ the lemon juice.
  4. Steam the rice in the last 5 minutes of cooking and add in the peas and sweetcorn.
  5. To serve squeeze the other ½ of lemon onto the rice and add the chicken on to the top.
